Malou Despoux grew up in the Languedoc, worked harvests in Bordeaux, California, Chile, and the Finger Lakes, then started Accordion Wines out of her garage in Accord in 2021. She still does all of it herself, about 500 cases a year.
Diatonic is a pet-nat: one fermentation, finished in the bottle under crown cap, native yeast only, nothing added and nothing taken away. Half De Chaunac and half Seyval Blanc, two French-American hybrids that have been growing in New York since long before anyone called them interesting.
The result is a light, dry sparkling red best served cold. Tart cherry and raspberry up front, a little blood orange, and enough earthy grip to keep it from reading as soda.
