HUNGARY : TOKAJ
LIGHT-BODIED, FLORAL, CITRUS, PEAR, CHALK, MINERAL, DRY, NO OAK
Spread over 250 acres of mineral-rich volcanic land in the south-west of the Tokaj region, the Disnókő estate has played a key role in restoring the region’s reputation back to the days when it was “the wine of kings and king of wines” (Louis XIV). Their Dry Furmint is refreshingly elegant, with a palate full of exotic fruits and a mineral, salty, finish.

GERMANY : RHEINGAU
LIGHT-BODIED, YELLOW APPLE, FLORAL, SLATE, MINERAL, OFF-DRY, NO OAK
As the first (and still the only) biodynamic producer in the Rheingau, the Kühns — who are 11th generation winemakers — have quickly become icons not only of Riesling, but of terroir-driven natural wines in general. Their Lenchen Kabinett is a solidly semi-sweet Riesling of great finesse and elegance, most characterized by its purity and the sharpness of its mineral grip.
Biodynamic & Low Sulfur
Pair With: Pear & Apricot Tart
AUSTRIA : NIEDERÖSTERREICH : WACHAU
MED-BODIED, MINERAL, CITRUS, RIPE APPLE, STRAW, PETROL, DRY, NO OAK
A phenomenal (dry) Austrian Riesling from Mathias Hirtzberger (the youngest son of famous winemaker Franz HIrtzberger). Succulent and just a little spicy, it’s got fresh acidity, fine salty and mineral nuance, a whiff of petrol, juicy white fruit, and a lemony touch in the background. Persistent, harmonious, and made for bottle aging.
Pair With: Wild Mushroom Ravioli with Pecorino and Truffle
CALIFORNIA : NAPA VALLEY
FULL-BODIED, FIG, BLACKCURRANT, BLACK PEPPER, WET GRAVEL, OAK
A beautiful, age-worthy release that’s already delicious in its youth, the HALL Cabernet Sauvignon is plush, lush, and brimming with black and red fruits that are nicely tempered by savory, oak-derived characteristics such tobacco and anise. A full spectrum of tannins and the long, smooth finish round out this complex powerhouse of a bottle.
Pair With: Hanger Steak with Asparagus Salad
