The Rocha family has been distilling cachaça at Fazenda Cachoeira since 1902, on land their family has farmed since the 1700s. The same stone mills installed in 1871 still do the grinding — pressing only the pure cane juice, no bagasse, no shortcuts. Four generations of native yeast and an 18-to-30-hour fermentation complete a production method that hasn't needed updating.

Cachaça is Brazil's agricultural rum: distilled from fresh sugarcane juice rather than molasses, the same production tradition as Rhum Agricole from the French West Indies. The result is more terroir-expressive than most rum — the Paraíba Valley's cane comes through in the glass, not just the alcohol.
