An ensamble mezcal from the Sacrificio Distillery in Tlacolula, Oaxaca, combining equal parts Espadín — the workhorse agave of Oaxaca at around 8 years of maturity — and wild Tepeztate, which requires up to 20 years to reach harvestable size. Both are roasted together, tahona milled, open-fermented in Sabine wood vats with local mountain water, then twice-distilled in copper alembic stills. The Tepeztate contributes a distinct green herb and mineral complexity that sets this apart from single-varietal expressions.
