The Wolski family has farmed organically in Khashmi since Alexander Wolski built the family wine cellar in 1984. His grandson George runs the operation today under the Andrias Gvino label — named after George’s son Andria, who appears on the label and has been helping at harvest since age three, the fourth generation in an unbroken line. Organic, non-irrigated vineyards; no fertilizers; no additives including sulfites; free-run juice only; unfiltered.
The Saperavi vines are 45 years old and ungrafted — pre-phylloxera rootstock, rare outside Georgia’s Kakheti. Short maceration in buried qvevri (traditional Georgian earthenware vessels) captures Saperavi’s inky depth and fruit without the austere tannins of more extended skin contact. The result is full-bodied and smooth, with velvety tannins and vibrant acidity.
