Aperol was born at the 1919 Padua International Fair, where brothers Luigi and Silvio Barbieri unveiled their low-alcohol aperitivo to an audience of merchants and travelers from across Europe. The formula — 16 botanicals extracted through five distinct techniques including cold maceration and percolation — has remained proprietary since day one. Campari Group acquired the brand in 2003, but production stays in Italy and the recipe is unchanged.
At 11% ABV, Aperol sits well below Campari's intensity — less bitter, more citrus-driven, with the rhubarb note grounding the sweetness. The standard serve is the Aperol Spritz (three parts Prosecco, two parts Aperol, one splash of soda, orange slice), a format that traces back to aperitivo culture in the Veneto and became the ninth best-selling cocktail in the world by 2019. It also works in a Paper Plane, a Paloma riff, or neat over a large rock as a pre-dinner pour.
