Bailly Lapierre has been making Crémant in an ancient underground quarry near Auxerre since 1972 — the same limestone hollowed out in the 12th century to build Chartres Cathedral. The 430-member cooperative helped establish Crémant de Bourgogne as France's first Crémant AOC in 1975, and today ages its wines 50 metres underground at a constant 12°C.
The Réserve Brut uses all four AOC varietals — Pinot Noir, Chardonnay, Gamay, and Aligoté — each pressed separately, then blended and aged on racks for 16–18 months minimum by the traditional method. Wine Enthusiast 90 pts — roundness, smoothness and creaminess, with a dry, fresh and friendly finish. This is the 375mL half bottle.
