Bailly Lapierre is a cooperative of 430 winegrowers from the villages surrounding Auxerre in the Yonne — the northern edge of Burgundy, where Jurassic limestone close to the surface and a cool climate create ideal conditions for traditional-method sparkling wine. The cooperative has occupied a former underground quarry at Bailly since 1972, aging bottles 50 metres below ground at a constant 12°C in the same Tonnerre limestone used to build Chartres Cathedral. They helped co-found the Crémant de Bourgogne AOC in 1975 — France's first official Crémant appellation.
The Rosé is made from lightly steeped Pinot Noir and Gamay by the traditional method, with secondary fermentation in bottle and a minimum of 16–18 months on lees. Low dosage; the mousse is fine and airy.
