Lasalde Elkartea was one of the ten founding growers of the Getariako Txakolina DO in 1990 — a two-hectare farm on the Gipuzkoa coast near the Bay of Biscay where Atlantic wind and maritime fog define the growing season. "Balea" is the Basque word for whale, a direct reference to the coastal fishing culture that sustained these villages for centuries. Lurdes Zubizarreta and her son Iker Eizmendi farm organically and raise a flock of sheep alongside the vines.

The 2024 is 60% Hondarrabi Beltza and 40% Hondarrabi Zuri, fermented in stainless steel and bottled young to capture the natural residual CO2 from fermentation — the barely-there spritz is intentional. Dry, searingly acidic, and light on its feet: red cherry and watermelon up front, a mineral-saline thread pulled from proximity to the ocean, and a clean, short finish. Serve cold and drink immediately.
