Raphaël and Vincent Bérêche have farmed without herbicides in Ludes since 2003, hand-harvesting 9 hectares across the Montagne de Reims, Vallée de la Marne, and Côte des Blancs — each parcel vinified separately with ambient yeasts and aged en tirage under cork rather than crown cap.
Brut Réserve is the house's multi-vintage blend: roughly 70% current base wine and 30% perpetual reserve drawn from a solera Jean-Pierre Bérêche started in 1985, so every bottle carries a trace of every year since. Skipping malolactic keeps the acidity direct and mineral, and dosage stays low at around 6 g/L. Recent releases have scored 91 at Vinous — "cranberry, mint, white pepper, slate and dried flowers".
PAIRINGS :
| Oysters and raw shellfish | chalk minerality and bright acidity are the natural match |
| Aged Comté | the wine's structure holds against a firm, nutty cheese without overwhelming |
| Scallops with lemon butter | citrus and white peach mirror sea sweetness; acidity cuts through the sauce |
