Bernheim was the first new wheat whiskey released in the United States since Prohibition — Heaven Hill launched it in 2005 as a genuine category revival. The Barrel Proof batches are the uncut version: no dilution, no chill filtration, cask strength. Batch C925 is 118.4 proof, drawn from barrels aged 7–9 years at the Bernheim Distillery in Louisville.
The 51% winter wheat mash bill inverts the standard bourbon formula — wheat is the majority grain here, not corn — producing a fruit-forward profile that leads with pear and raspberry rather than the usual caramel and vanilla. Black pepper builds on the finish alongside citrus and a warm, deep oak. A few drops of water open it considerably.
