Charles Bieler calls this a wine cocktail, and the label class backs him up: sparkling grape wine with natural flavors. The base is rosé from dedicated cool-climate sites in Washington’s Columbia Valley at 1,100 feet, where slow ripening builds flavor and holds acidity without piling on alcohol.

Blood orange and a proprietary botanical mix go in after. The lead botanical is gentian root, the same bitter behind Campari and Aperol, and it works here the way tannin works in a red, counterbalancing the fruit.

Carbonated to Prosecco pressure and finished at 9%. It is unfiltered and made with minimal sulfur, so the haze is deliberate.
