Billecart-Salmon Vintage Extra Brut 2016 750ml
FRANCE : CHAMPAGNE
Pinot Noir, Chardonnay
MED-BODIED, GREENGAGE, CRUNCHY CHERRY, CITRUS ZEST, TOASTED NUTS
All grand cru, split 66% Pinot Noir from the Montagne de Reims and 34% Chardonnay from the Côte des Blancs, with the Pinot setting the frame and the Chardonnay keeping the line taut. It spent 64 months on the lees and took a dosage of just 1.9 g/L, so what you taste is the wine, not the sugar.
2016 was a hard year in Champagne: April frost, a record-wet spring, June hail, then the driest summer in two decades. Pinot Noir came through the late sun best, and the wine is fuller than the rainfall suggests: crêpe batter and toasted nuts over bright citrus, with a creamy mousse. Jamie Goode 94 pts.
PAIRINGS :
| Bream ceviche with calamansi | the producer's own pick; sharp citrus meets the zesty edge |
| Pan-roasted turbot, citrus beurre blanc | the Chardonnay line cuts through the butter |
| Jamón ibérico, aged 36–48 months | salt and nutty fat against a near-dry dosage |
