This Passetoutgrains — a blend of Pinot Noir planted in 1974 and Gamay planted in 1953, all from a single plot within the confines of Volnay proper — has luscious fruit character balanced by the mineral structure typical of the village. Fresh, yet layered.
François Bitouzet ferments with native yeasts and ages 16 months in used barrels. The 2023 offers surprising briskness for the vintage's warmth, with a refined savory finish that earns it a place alongside wines from far more prestigious terroirs. Only 250 cases reached the US.
