Black Button Distilling opened in Rochester in 2012 as the first grain-to-glass distillery in the city since Prohibition. Jason Barrett founded it at 24, sourcing grain from farms within 50 miles — including Danko rye grown on the shores of Conesus Lake. The Empire Rye designation requires a minimum 75% locally grown New York rye, two-year minimum age, and a barrel entry proof no higher than 115; Black Button was one of the six founding distilleries of the Empire Rye Whiskey Association.

Unfiltered and bottled at 96 proof, the rye runs through temperature-controlled fermentation and a proprietary pot-column-pot-column distillation before aging in custom charred American white oak. Whiskey Advocate rated it 89 points; it took a Silver Medal at the 2023 San Francisco World Spirits Competition.
