Black Elephant Vintners Methode Cap Classique NV 750ml
SOUTH AFRICA : WESTERN CAPE : FRANSCHHOEK
ORGANIC : Chardonnay, Pinot Noir
LIGHT-BODIED, GREEN APPLE, ALMOND TOAST, BAKED PEAR, BRIOCHE, NO OAK
Black Elephant Vintners was founded in 2011 in Franschhoek by three partners with distinct roles — Kevin Swart on strategy, Jacques Wentzel on winemaking, and Raymond Ndlovu as co-owner and the face of what became one of the Cape's few genuinely Black-owned wine estates.
This MCC starts with whole-bunch pressing at a strict 500L/ton yield, ferments 14 days at 15°C with selected Champagne yeast, rests 12 months on primary lees before tirage, then ages 27 more months in bottle under crown cap. That's 39 months total on lees — a number that shows up in every sip. Wine Review Online, 90 pts: "bright acidity, almond toast, baked pear, green apple skins, and mineral-driven undertones."
PAIRINGS :
| Oysters on the half shell | acidity and bubbles cut through brine; mineral finish aligns with oceanic salinity |
| Smoked salmon blini | autolytic brioche notes and lemon acidity make this a textbook MCC pairing |
| Goat cheese crostini | citrus-forward acidity is a natural match for tangy chèvre |
