Made entirely from wild Maine blueberries — the stone-age fruit that has grown in the state's glacial soils for 10,000 years — Bluet is a sparkling wine with nothing to do with blueberry pie. It is bone dry, packed with natural acidity, and pressed from two pounds of berries per bottle. Founders Michael Terrien (former Napa Valley winemaker at Acacia and Hanzell) and Eric Martin launched it in 2014 with a single ingredient they had spent their whole childhoods eating in Maine backyards.
Charmat method, fermented in tank — the same technique as Prosecco. Seven percent alcohol, zero carbs, no sulfites. Deep purple in the glass with wild blueberry, cranberry, earth, and a snap of citrus. It reads closer to a dry Lambrusco than anything sweet or pink. The 250ml can is the right size for an oyster bar, a lobster shack, or a solo afternoon with charcuterie.
