FULL-BODIED, TOASTED HAZELNUT, TOFFEE, DRIED FIG, BRINE, NEUTRAL OAK

Bodegas Gutiérrez Colosía has made Sherry from the same bodega at the mouth of the Río Guadalete since 1838 — one of the last family-owned houses still operating in El Puerto de Santa María. The Sangre y Trabajadero solera predates even them: it began in the early 1800s at a cooper's trabajadero on Calle Sangre in Jerez, passed through two other bodegas, and arrived at Gutiérrez Colosía after the 1982 Rumasa crisis. The original label has never changed.

Oloroso ages without the protection of flor yeast, exposed to slow oxidation in old barrels for an average of 12 years. The result is fully dry despite its voluptuous texture — dark amber, layered with hazelnuts, toffee, dried figs, and a tell-tale briny note that marks the coastal terroir of El Puerto. A 93-point score from Wine Casual calls it "a slightly lighter-styled oloroso" — the influence of the bay breeze keeping things lively.

Roast chicken with pan drippings the wine's salinity cuts through roasted fats cleanly
