Every vine behind this wine grows in a hoyo — a pit hand-dug through Lanzarote's petrified volcanic crust down to the buried topsoil, ringed with a crescent of stacked lava rock to blunt the Atlantic wind. Yields run around 16 hectoliters per hectare, a fraction of what's typical even in low-yield regions, and every step from planting to harvest is done by hand.
Los Bermejos direct-presses the Listán Negro with no skin contact, which is what keeps the color this pale rather than the deeper pink of a run-off rosé, then ferments it in stainless steel to preserve the fruit and the site's volcanic minerality untouched by oak.
