Bodega Maires is a family project in Toro, started in 2015 by cousins Fernando and Pablo to pick their ancestors' winegrowing back up. The Ademán range names each wine for a hand gesture, and Carabizal is the roble — the entry red, built for drinking now.
The fruit is trellised Tinta de Toro from the sandy Carabizal sector of the appellation, hand-picked into small crates and sorted at the winery, fermented for 17 days, then given a short stint in medium-toast French oak. Sand is what keeps Toro's big reds supple, and here it shows as fresh, broad fruit with the wood tucked in behind it.
The Toro DO rated 2023 an excellent vintage for both quality and quantity. Less brooding than the region's reputation, more red fruit than black — an everyday way into Toro.
PAIRINGS :
| Grilled lamb chops | fresh red fruit cuts the fat; the toast meets the char |
| Chorizo and jamón board | spice on spice, enough freshness for cured fat |
| Wood-fired sausage pizza | broad fruit with room for fennel and smoke |
