The .1 is the control of every Octomore series, the edition Head Distiller Adam Hannett keeps in ex-American whiskey casks so the barley and the peat do the talking. For 12.1 that means Scottish-grown Concerto barley from the 2014 harvest, peated to 130.8 PPM and distilled in 2015.

Five years, full term, in first-fill American whiskey casks — no finish, no wine cask. Matured entirely on Islay, non-chill filtered, no added colour.

Lemon zest and earthy smoke on the nose over vanilla sponge and barley sugar, golden syrup and pepper on the palate, salted caramel and lingering peat on the finish. A few drops of water open it up. Whisky Advocate 94 pts.
