Cakebread Cellars Cabernet Franc 2021
UNITED STATES : CALIFORNIA : NAPA VALLEY
SUSTAINABLE : Cabernet Franc, Merlot, Syrah, Cabernet Sauvignon
MED-BODIED, VIOLET, BLACKBERRY, CHERRY, FENNEL, NEW OAK
Cakebread Cellars has been farming Napa Valley since 1973, and the Cabernet Franc — estate-grown from multiple vineyards, including the cool Suscol Springs Ranch at the valley's southern end — remains one of their most expressive wines. Pacific breezes and rocky, well-draining soils push the vines toward small, aromatic clusters with natural freshness.
The 2021 vintage opened with drought conditions but delivered concentrated, nearly perfect fruit: ample early rains recharged the soils, a mild spring allowed slow even ripening, and small crops of intensely flavored grapes came in from September 13 through October 6 — harvested before dawn to preserve acidity. Aged 17 months in 57% new French oak. 90 Points, VinePair.
PAIRINGS :
| Duck breast | cherry and herb notes complement game; acidity cuts richness |
| Roasted lamb | tannin and spice handle the richness; fennel in the wine echoes the herbs |
| Mushroom risotto | earthy notes connect; bright acidity keeps the dish from feeling heavy |
