WINEMAKING : Fruit is hand harvested and undergoes 24 hours of cold maceration after destemming and pressing; fermentation occurs in barrel without batonnage, temperature control, or added yeasts; wine is aged for 11 months completely untouched in used french oak barrels under a layer of flor (responsible for the subtle touch of toasty, oxidative notes).
