Drappier is a family-owned estate in Urville, in the Aube — Champagne’s southernmost sub-region, where Kimmeridgian limestone gives wines a mineral backbone distinct from the Marne. The house has farmed here since 1808, and Pinot Noir has been the defining grape since the 1930s, when Michel Drappier’s grandfather first replanted it in the canton and earned the nickname le Père Pinot.
Carte d’Or is the flagship NV: 80% Pinot Noir, 15% Chardonnay, 5% Meunier, blended with 40% reserve wine and bottled unfined and unfiltered. Organic (Ecocert) across 27 hectares; the first Champagne house certified carbon neutral (2016). Kosher, Mevushal, Pareve, and Kosher for Passover (OU). Wine Enthusiast 90 pts. Decanter 91 pts.
PAIRINGS :
| Oysters on the half shell | the mineral spine and fine bubbles cut through brininess |
| Roasted chicken | Pinot-driven structure holds up to white meat without overwhelming |
| Aged hard cheese (Comté, Gruyère) | brioche and toasted almond notes echo the nuttiness; works for a cheese course |
