FRANCE : CHAMPAGNE
Pinot Meunier
FULL-BODIED, RASPBERRY, CRANBERRY, BLOOD ORANGE, CHALK, NEUTRAL OAK
Racy, rich, full, and focused. Lower dosage than the ‘Ultradition,’ giving a much longer, drier finish. Soft, yet forward notes of raspberry and citrus on both the nose and palate.
All Meunier, from the Laherte family's old vines in Chavot and the Vallée de la Marne. The blend is the clever part — 60% white-pressed Meunier, 30% macerated on its skins, 10% still red Meunier — fermented across vats, foudres and barrels with partial malolactic, and built on reserve wines aged in barrel.
It shares its base wine with the Ultradition Rosé; what changes is the dosage, 2.5 g/l here against 6–8 g/l, and the disgorgement is done by hand. Production runs to roughly 30,000 bottles.
PAIRINGS :
| Roast duck breast | red fruit and the still-red Meunier stand up to the meat |
| Salmon crudo with blood orange | echoes the citrus; chalk and low dosage keep it lean |
| Jamón ibérico | salt and fat against cranberry-bright acidity |
