Peyrassol is one of the oldest documented estates in France — the Marseille archives hold the 1256 harvest record from when the Knights Templar provisioned pilgrims at this 850-hectare property in the Var. Today it's organically farmed, and the La Croix cuvée is Méditerranée IGP, not Côtes de Provence — a distinction that matters. The broader appellation allows the inclusion of Caladoc, a rare Malbec × Grenache Noir crossing that most Côtes de Provence rosés can't carry; it adds an herbal, structured note that gives this wine something the pink-bottle category rarely delivers.
Pneumatic pressing and a 4-hour cold settling preserve the aromatics before stainless steel fermentation on fine lees builds a slightly creamy midpalate. Decanter: 90 points. Drink now through 2026.
