Red Stave starts with a high-rye mash bill and Kentucky Straight Bourbon character, then finishes in J. Wilkes Petite Sirah barrels from Paso Robles, California. The result is something genuinely different: the whiskey takes on a reddish-orange hue, and the fruit presence of the wine barrels — cranberry, cherry, red currant — layers over the expected caramel and spice rather than replacing them.
