Cahors is Malbec's actual birthplace — Argentina picked up the grape a century after this stretch of the Lot valley had already built a reputation on it, and the appellation still leans on its old nickname, vin noir, for the deep color thick-skinned Malbec throws off.

Benoit Aymard took over his family's overgrown plots in Lacapelle-Cabanac in 2014 — third generation on the land, first generation running his own winery — and replanted better Malbec clones at higher density across the domaine's limestone Causse plateau and lower river-terrace soils. The estate farms biodynamically.

Les Polissons is his answer to Cahors' reputation for tannic, cellar-only Malbec: small-lot stainless fermentation, minimal sulfur, aged in large neutral barrels just long enough to hold the fruit together. The name is a nod to his kids, Paul and Lisson, and a fair description of the wine — a little mischievous, built for drinking now rather than later.
