Clos Jaugueyron Haut-Médoc 2021 750ml
FRANCE : BORDEAUX : HAUT-MÉDOC
BIODYNAMIC : Cabernet Sauvignon, Merlot, Petit Verdot
MED-BODIED, REDCURRANT, GRAPHITE, CEDAR, DRIED HERBS, NEUTRAL OAK
Clos du Jaugueyron sits in the southern Haut-Médoc, a 3.4-hectare parcel on gravel and sand soils near Cantemerle and La Lagune — terrain that pulls toward mineral precision rather than weight. Michel Théron, a Languedoc-born outsider who came to Bordeaux to study in 1988 and never left, has been farming these vines biodynamically since 2008, certified since 2012.
In the cellar, mainly destemmed fruit — with a portion of whole bunches — macerates in concrete for 7–10 days before moving to a mix of barriques, 400-liter barrels, and foudres for 12 months. Around 25% new oak. No fining, no filtration. The structure is more serious than the price suggests — classic Left Bank architecture that drinks well young and earns 4–6 more years in the cellar.
2021 was a difficult year for the Médoc broadly, but Théron's biodynamically farmed vines in the southern appellation — close to the moderating influence of the Gironde — came through largely unscathed. Graceful and expressive more than powerful. Decant 30 minutes before serving.
PAIRINGS :
| Roast leg of lamb with herbes de Provence | classic regional pairing — red fruit and cedar echo the herbs; tannin cuts through the fat |
| Braised duck with lentils | savory structure tracks the duck's richness; earthy lentils mirror the forest floor notes |
| Mushroom risotto | cedar and forest floor in the wine sync with mushroom umami; acidity keeps the richness honest |
