Covenant’s first varietal Cabernet Sauvignon under The Tribe label. Sourced from a single Mettler family vineyard in Lodi — terra rosa soils, warm days, afternoon Delta winds that pull temperatures back down at night. Native-yeast fermented and aged in French oak.
Mevushal by flash-détente: the grapes are briefly heated before fermentation begins, not the finished wine. The gentlest mevushal method available — the wine drinks clean, without the cooked-fruit note that comes from heat-pasteurizing after the fact.
Herb and licorice frame a core of cassis and huckleberry. Tannins are smooth, the finish long enough to hold up at the table. No animal fining agents.
