Rachael Petach founded C. Cassis in Rhinebeck in 2020, reviving a fruit that spent most of the 20th century banned in the United States. Blackcurrants were prohibited for decades because the plants threatened white pine growth — the ban lifted in New York in 2003 when botanist Greg Quinn helped restore the crop. C. Cassis sources its currants from Quinn's farm, about 20 minutes from production.

The CC Spritz is the flagship aperitif — lightly fermented Hudson Valley blackcurrants with lemon verbena, cardamom, bay leaf, and citrus rind — diluted with seltzer and canned at 5.4% ABV. Refreshing and herbaceous, with a tart edge that makes it as good as a cocktail ingredient as it is cold from the can.
