Four weeks on the skins in 800-liter tanks, with a touch of malolactic fermentation for creaminess. Fermentation starts on its own, with no temperature control, and the wine then rests six months in stainless steel before going into the bottle unfined and unfiltered.
The label is named for Dora Kallmus, the Viennese portraitist who worked as Madame d'Ora and ran one of interwar Europe's great photography studios. Gerald Diem is the fifth generation of his family at Obermarkersdorf, farming certified organic since 2015.
Expect orchard fruit and an orange creamsicle lift, white pepper and savory herb from the Grüner Veltliner, apricot and rose petal from the 10% Roter Traminer. Skin contact builds body and a black tea grip without weight, and the liter format is the tell: built for pouring through a meal, not for saving.
