Divella Gussago 'Blanc de Blancs' NV 750ml
ITALY : LOMBARDY : FRANCIACORTA
NATURAL : Chardonnay
LIGHT-BODIED, BRIOCHE, LEMON ZEST, SALINE, MINERAL, NEUTRAL OAK
Alessandra Divella doesn't call this Franciacorta. Gussago — the eastern commune where she farms — is the only part of the zone with chalk and limestone, and she believes the distinction earns a different name. "Franciacorta is something entirely different," she says. Zero dosage, zero sulfur, indigenous yeast, no fining, no filtering.
The Blanc de Blancs is pressed by hand using an old basket press, fermented spontaneously in used barriques, and aged over 30 months on the lees. At 1 g/L residual sugar it is bone-dry — the brioche and mineral depth are earned through time, not added at disgorgement. Alessandra started this estate in 2012 at 28, the first female winemaker to lead a Franciacorta property, and remains one of a handful of producers working naturally in the region. Falstaff 91 pts.
PAIRINGS :
| Oysters on the half shell | mineral salinity and cut acidity mirror the brine; zero-dosage dryness stays out of the way |
| Grilled branzino with lemon and herbs | citrus and saline backbone bridge the fish; lemon in the dish echoes the wine's acidity |
| Burrata with lemon zest and sea salt | 30+ months of lees character stands up to the cream; salt and citrus tie it together |
