The benchmark for French vermouth since 1821, Dolin Rouge comes out of Chambéry — the only French city with a protected designation of origin for vermouth, earned in 1932. Production follows the A.O.’s requirements: whole botanical plants macerated directly in Ugni Blanc base wine for weeks, then sweetened with sugar, then fortified with grape spirit. No extracts, no shortcuts.

More than fifty Alpine herbs go in. The result sits on the drier end of the sweet vermouth spectrum — firm, herbal, clean-finishing — a Manhattan vermouth that lets the rye lead rather than swamping it. The Sevez family, now in their fifth generation, has owned and operated Dolin since 1905.
