Picpoul de Pinet sits on the western shore of the Bassin de Thau — a shallow saltwater lagoon where oysters have been farmed since Roman times. The appellation earned its own AOC in 2013; the rules require 100% Piquepoul Blanc from six coastal communes, harvested young and bottled early to preserve the variety's sea-spray freshness.
Domaine Font Mars has been in the Clock family since 1864. Jean-Baptiste de Clock farms 55 hectares across three distinct soil types, harvesting by hand at night and fermenting at low temperature in stainless steel. The wine is bottled in January — no oak, no malolactic — a deliberate sprint to preserve the citrus and saline character that makes this appellation what it is.
