Picpoul de Pinet is the Languedoc's single-grape white: the appellation allows still wine from Piquepoul and nothing else, grown near the Mediterranean where summers run hot and dry. Grapelive 90 pts for the 2025.
Domaine de Font Mars is one 55-hectare block near Mèze, facing the sea, on land that holds fossil dinosaur eggs. The estate has been worked since 1864 and came to the de Clock family by marriage in 1949. Jean-Baptiste de Clock owns and runs it today.
The Picpoul comes from the estate's clay-limestone parcels, picked by hand at night in mid-September to keep it fresh, fermented cool for 20 days and kept in stainless steel tanks. It is bottled at the estate the January after harvest.
