FRANCE : BURGUNDY : CÔTE D'OR

ORGANIC : Pinot Noir

LIGHT-BODIED, RED CHERRY, RASPBERRY, PEONY, BLACK PEPPER, NEUTRAL OAK

François Mikulski farms 1.3 hectares of Pinot Noir in Meursault under non-certified organic management — vines planted in 1929 and 1980, on alluvial soils at the base of the Côte d'Or slope. After ten months in oak barrel and two more in tank, this Bourgogne Côte d'Or delivers the kind of honest, fruit-forward Burgundy the appellation is built for: light in frame, expressive, and built around acidity rather than weight.

2022 was a landmark year across the Côte d'Or — the driest and sunniest season in decades, with a crucial June rain that swelled the berries before a torrid summer concentrated flavors. The wines came out with melting tannins, beautiful precision, and a freshness that makes them drink well now. This bottle opens with red and black fruit coulis, peonies, and chocolate ganache; the palate turns peppery and sapid, with blood orange and cranberry giving it tension through the finish.

PAIRINGS :

Steak tartare the wine's raw-meat note and acidity are the classic match for hand-chopped beef
Roast chicken with tarragon light frame and cherry fruit are right for weeknight poultry without dominating
Saucisson and country pâté pepper and spice in the charcuterie find their mirror in the wine's finish
