Domaine Hubert Lignier Bourgogne 'Symbiose' Pinot Noir 2024 750mL
FRANCE : BURGUNDY : CÔTE DE NUITS
Pinot Noir
LIGHT-BODIED, RED CHERRY, DRIED ROSE, FOREST FLOOR, MINERAL, NEUTRAL OAK
Domaine Hubert Lignier has farmed the limestone and clay soils of Morey-Saint-Denis since 1959, building a portfolio anchored by Clos de la Roche Grand Cru and a string of premier cru and village-level wines across the Côte de Nuits. Laurent Lignier earned AB organic certification for the estate in 2019 and has been extending biodynamic practices across selected plots since 2018. All wines are unfined and unfiltered after 20–22 months on lees.
The 2024 vintage delivered a cool, wet season in Burgundy — more rainfall than usual from flowering through August, strong mildew pressure, and a September recovery that saved phenolic ripeness. The resulting wines are lighter in frame than recent warm vintages, with high aromatic lift, red fruit clarity, fine tannins, and brisk acidity. Modest alcohol. They drink well now and will hold for several years without requiring it.
ECOLOGY : Certified Organic (AB, since 2019)
PAIRINGS :
Roast chicken with pan jus — the wine's red fruit and low tannin don't compete with white meat; savory jus pulls the earthy note forward
Duck breast with cherry sauce — the sauce mirrors the wine's dominant fruit, duck's fat balances the acidity
Mushroom risotto — earthy umami amplifies the forest floor character; cream softens any edge
Charcuterie board (pâté de campagne, cornichons) — acidity cuts through fat, tannin matches pork-forward preparations
Herb-roasted lamb chops — brisk acidity and fine tannin provide structure without overwhelming the meat
