Domaine Hubert Lignier Gevrey-Chambertin 'Les Seuvrees' 2022/2023 750ml
FRANCE : BURGUNDY : GEVREY-CHAMBERTIN
ORGANIC : Pinot Noir
MED-BODIED, RED BERRY, BROWN SPICE, GRAPHITE, GAME, OAK
Les Seuvrées sits in the southern tier of Gevrey-Chambertin, directly below the Grand Cru Mazoyères-Chambertin on the slope, on land the Lignier family has farmed for five generations. The vines — a massale selection planted by Laurent Lignier's grandfather between 1938 and 1966 — are among the oldest in the village. Age this extreme produces small berries, low yields, and the kind of deep-rooted complexity that newer plantings can't replicate.
Laurent Lignier uses approximately one-third whole bunches in 2022, an extended cold soak before fermentation, and ages in French oak at 20% new — a program that builds structure without masking the vineyard. The 2022 is a classically structured Gevrey that rewards 5–7 years of cellaring; the 2023 runs more approachable and fruit-forward, earlier to drink.
PAIRINGS :
| Boeuf bourguignon | the definitive Burgundy match; braised beef and village Gevrey share geography and philosophy |
| Roasted quail with mushrooms | the wine's gamey character echoes game birds; mushrooms amplify earthy depth |
| Aged Comté | structured tannins and earthy depth cut through and complement the cheese cleanly |
