MED-BODIED, RASPBERRY, WILD STRAWBERRY, ROSE PETAL, CHALKY MINERAL, NEUTRAL OAK
Monthélie sits wedged between Volnay and Meursault — the same limestone hillsides, the same Bathonian bedrock — and is one of Burgundy's last genuinely underpriced appellations. Jasper Morris scored it 88–90 and noted the tannin structure is unmistakably Lignier: easy-going fruit on the attack, a persistent grip behind, and a finish that earns patience.
Domaine Hubert Lignier has been farming Morey-Saint-Denis since roughly 1880. Laurent, the fifth generation, practices lutte raisonnée — organic compost, no herbicides, hand-harvest with strict sorting — and vinifies in the gravity-fed cellar that defines the house style: full destemming, five-day cold soak, native yeasts, 18 months in French oak (20–30% new), no fining, no filtration.
This village wine comes from two lieux-dits: Les Duresses and Jouères. The combination brings limestone structure and lower-slope clay richness together in a way that speaks to the appellation's adjacency to both its neighbors. Drink from 2028; cellars well through 2032.
PAIRINGS :
| Duck confit | earthy richness and dark fruit match the classic Burgundian preparation |
| Roasted chicken with mushroom jus | the earthy depth and chalky mineral note are built for poultry and fungi |
| Aged Époisses or Comté | regional cheese pairing — salty, unctuous, the wine's acidity carries through |
