Les Houillères sits on a stony plateau at the Puligny end of Chassagne, close to the Encégnières and Vide-Bourse premier crus, which is why it reads tighter and more mineral than the village name usually suggests.
The parcel runs to 0.82 hectares, planted in 1955 with a young replant in 2019. Thibault Morey certified the domaine organic with Ecocert in 2018 and has used biodynamic preparations since 2015.
Sulfur is left out at the crush, the bunches are pressed long and hard to pull natural antioxidants from the stems and pips, then twelve to fourteen months in 228- and 350-litre oak, roughly a third of it new. Bentonite-fined, bottled unfiltered.
