Nathalie and Gilles Fèvre have been growing vines in Chablis since 2003, when they broke from a family tradition of selling grapes to the La Chablisienne cooperative — a tradition going back to 1923, and a family presence going back to 1745. The village Chablis comes from 32 hectares around Fontenay-Près-Chablis, on the Kimmeridgian limestone that gives the appellation its defining oyster-shell minerality. Ten months on fine lees in stainless steel adds texture without obscuring the terroir.
The 2024 is from one of Chablis’ most challenging recent vintages — frost, hail, and floods cut yields below 10 hl/ha — but what survived is classically structured: grapefruit, lemon, stinging acidity, and that indelible mineral backbone.
