Nathalie Oudin took over her parents' domaine in Chichée — a village 3 km south of Chablis, with stonier soils and the last layer of Kimmeridgean limestone — and rebuilt it into one of the region's most reliable small estates alongside her sister Isabelle. No herbicides, no weedkillers, yields held well below the appellation maximum; in the cellar, machine-harvested Chardonnay is gently pressed, fermented with native yeasts over two-plus months, then aged entirely in stainless steel on the lees — no oak at any stage. Minimal sulfur at bottling.
The tout-court Chablis — the local term for village-level wines, as opposed to premier or grand cru — is exactly the kind of wine we want to drink every night. Elegant, understated, and food-friendly. Drink now through 2028.
