Vin Jaune is the most singular wine France makes: 100% Savagnin, aged for seven years under a film of yeast called voile in old barrels, the liquid giving up a portion of itself to evaporation and gaining in return a flavor depth no other winemaking process produces. Sotolon, the compound responsible for that unmistakable curry-walnut-dried-citrus character, doesn't come from the grape. It comes from time.
Christian and Patricia Pecheur farm eight hectares in Darbonnay, on the blue marlstone slopes of Mont Royal and Grand Vaux in the Côtes du Jura. Only a few parcels of old-vine Savagnin go into their Vin Jaune each year. This 1991 has been aging since before many of our customers started drinking wine. It's a rarity to offer vintage wines of this age, especially for Jura wines!
