Vin Jaune is the Jura's most singular wine — 100% old-vine Savagnin grown on blue marlstone, aged beneath a living veil of flor yeast for a minimum of six years without topping up. The slow, controlled oxidation under the voile creates the wine's defining character: toasted hazelnuts, curry, dried citrus, and a high-acid mineral tension unlike anything from Burgundy or Alsace.
The lovably warm and funny Christian and Patricia Pêcheur farm eight hectares of vines in the Côtes du Jura; only a few parcels of old-vine Savagnin from the steeply sloped Mont Royal and Grand Vaux sites — planted on classic blue marlstone — become their Vin Jaune, resting sous-voile for at least seven years. The 2000 vintage is now well into its third decade of life, drinking beautifully in a narrow and irreplaceable window.
