Domaine Preignes le Vieux is a family estate at Vias, in the Languedoc between Béziers and Agde, kept by the Vic family over five generations, with Jérôme Vic as winemaker and Aurélie Vic as wine expert. The estate sits on Roman remains and has its own thirteenth-century château, listed as a Historic Monument.
The Réserve du Domaine Rosé is 60% Grenache, 25% Syrah and 15% Cinsault from volcanic and clay-gravel soils. The juice spends eight hours on the skins in vat before fermenting at 16 to 18°C over twelve days, for a round, fresh rosé with raspberry, floral and mineral notes.
PAIRINGS :
| Grilled fish | the producer's own suggestion; round, fresh fruit next to char and lemon |
| Marinated fish salad with pink peppercorns | raspberry and floral notes alongside the gentle spice of the peppercorns |
| Pissaladière with anchovies | a fresh, mineral rosé for sweet onions, olives and salty anchovy |
