Domaine Thierry Hamelin Petit Chablis 2022 750ml
FRANCE : BURGUNDY : PETIT CHABLIS
Chardonnay
LIGHT-BODIED, CITRUS BLOSSOM, WHITE PEACH, IODINE, WET STONE, NO OAK
Petit Chablis occupies the outer plateau of the Chablis appellation, where the geology shifts from the famous Kimmeridgian marl of the premier and grand cru vineyards to harder, younger Portlandian limestone. Higher elevation (230–280m), shallower soils — the wines run leaner and more immediate, built for early drinking rather than cellaring.
Domaine Thierry Hamelin has worked this terrain since 1840 — seven generations based in Lignorelles, now run by Thierry and his son Charles across 36-plus hectares in Poinchy, Beines, and Lignorelles. Vinification is uncompromising in its simplicity: stainless steel from harvest to bottle, gravity flow, thermo-regulated fermentation, nine-plus months on lees. No oak ever enters the picture.
PAIRINGS :
| Oysters on the half shell | the textbook match — brine in the glass, brine on the plate |
| Grilled Dover sole with lemon butter | light body and high acid hold up to the fish without competing |
| Fresh chèvre on baguette | tangy goat cheese plays off the Portlandian minerality and citrus finish |
