Jipijapa sits in the coastal hills of Manabí province on Ecuador’s western flank — a region with no established rum tradition until La Maison & Velier started sampling 18 small distillers making cane spirit by hand. They landed on Carlos Baque Zorrilla, third-generation producer of El Amparo — “refuge” in Spanish — a name given by his grandfather when the family started distilling 60 years ago.
The Cubana Negra cane is harvested at 18 months by machete, cut 15 cm above the bud so the plant regrows. Fermentation is wild — ambient yeast in open vats for five to seven days — then a single pass through a 500-liter copper still. Bottled at still strength. No aging, no additions. What you’re buying is as unmediated as rum gets.
