Batch No. B521 is the May 2021 release of Elijah Craig Barrel Proof, the second of that year's three batches, drawn from 12-year-old barrels and bottled uncut, without chill filtering. At 118.2 proof it was the lowest-strength batch the line had ever shipped, four points under the old B519 floor, and only A125 has matched it since.

Less heat, more sweetness: caramel, brown sugar and a peanut-brittle nuttiness that reads as classic Heaven Hill, with cinnamon and oak drying out a long finish. Give it a few minutes in the glass before you reach for water. Distiller's Amanda Schuster scored it 93 and called it "a big, pillowy hug of a bourbon." Heaven Hill, family-owned since 1935, makes it in Kentucky.
