Eric Bordelet runs Château de Hauteville in Charchigné — pear country on the borderlands of Normandy and Maine, where old orchards of heirloom perry varieties grow on granite and schist soils. Before taking over the family estate in 1992, he was the head sommelier at Taillevent in Paris; that background shows in the precision with which he handles the fruit.
The Poiré Authentique is made by the ancestral method: hand-harvested pears, keeved (a slow traditional clarification that concentrates natural sugars), and bottled during fermentation. The mousse is all natural, no added CO₂, no chaptalization. Alcohol lands between 3 and 4 percent. The sweetness is fructose from the pear, not added sugar — off-dry in balance, never cloying.
