Dry-farmed with organic practices across eight sites — Mahonia, Illahe, Koosah, Sojeau, Prophet, Jubilee, Cortell Rose and the winery's own Torres Hill — the 2024 is fermented with a proprietary Jayer yeast strain, macerated 25 days on skins, and aged 13 months in French oak, nearly all neutral.
